Alexis Hotel Meatloaf ~ Seattle, Washington

I was involved with the Alexis Hotel several times and, every time, I picked up recipes that have become part of my basic repertoire. This is another of them.

You might want to make 1/2 of the recipe altho it freezes well.

3 # organic extra lean ground beef
1 1/2 # medium grind organic lean pork loin
1 # finely ground Applewood Farms Ham
2 c. homemade bread crumbs
3 c finely minced onion
3 TBL minced garlic
6 eggs
1 TBL black pepper, coarse grind
1 1/2 TBL thyme
1/3 c. red wine
3 grated and peeled green apples
3 grated and peeled carrots

Gently mix together.

Pack into bacon-lined pans. The number of pans depends on the size of the pans. 6 regular loaf pans or 12 1/2 loaves. Put the filled pans in a deeper pan in case of spills. Lining the bottom with foil makes clean up easier.

Bake at 350 degrees until internal temperature reaches 180, about 1 hour for regular loaves. Drain off fat and cool.

    What got me about this recipe is the pork loin, ham and apples combined. I love meat loaf. Gonna love it more, real soon.
