Raymond’s Sunshine Market Sweet Meat Stew

Raymond was the butcher at my local old style market, the Sunshine Market at 12th and Mountain.  Living around the corner for 15 years, buying fresh meat daily became a habit. After Raymond retired,  George picked up the knives and ground the best burger I’ve ever cooked over Northern New Mexico mesquite coals.

Retired but still cooking, Raymond served this up with my neighbor Ed every Christmas Eve at the Knights of Columbus Hall.

1 # lamb
1 c. raisins
1 tsp allspice
1 small glass sweet wine
1 small onion
1 pint water
1 TBL sugar

Cut meat in small cubes and boil 1 hour in water. Add onion, cut in pieces, raisins, allspice, sugar, salt to taste and wine. Boil until meat is tender
