Gloria’s Honey and Sweet Onion Dressing

At Zambala Farms in Talent, Oregon, my friend Greg raises bees, truffles, bamboo and exotic squash.

I learned how to make this dressing from Gloria Monte when I worked the service bar at Al Monte’s on Rio Grande outside of Old Town.  She was an amazing cook. I never quite managed to duplicate the recipe until I started using Greg’s honey.

Zambala Farm Honey and Sweet Onion Dressing

1⁄4 ea medium sweet onion
1 c. honey
1 tsp salt
1 tsp celery seed or 2 tsp ( or more) poppy seeds
1 tsp dry mustard
2/3 c. cider vinegar
2 c. oil

In blender or food processor, blend all except oil.

Drizzle oil in slowly to thicken. Refrigerate.
