Sweet Onion Foccacio ~ Placitas Potluck

I’m convinced that most of my invites to spur-of-the-moment potlucks are due to the same friends staring at their empty pantry and puzzling out what to have for dinner.

I can hear them working down the phone tree: Jim and Tanya make wine, JP does curry and Evangeline brings dessert. That leaves me to cover a loaf of locally made Fano Ciabatta with sweet onions sauteed in olive oil, roasted garlic cloves, chopped green chili, sliced tomatoes and handfuls of cotijo cheese before throwing it into a hot oven to toast.

If you’re going to a potluck up near Taos, feel free to substitute bread from Santa Fe’s Sage Bakehouse or, if Debbie is still producing those wonderful Italian style breads,  from Casa Fresen in Arroyo Seco.
