Red Chile Concentrate

One of the benefits of having an authentic New Mexican holiday is that we have big bowls of red chile to put on everything. Mom makes her sauce differently that I do. Since she’s cooking this year, I’m giving you her recipe for Red Chile Sauce.

Chile
1-2 cups water
8-10 red chile pods cleaned and seeds removed

1. Place water and chile pods in large saucepan.  Boil on high heat, cook until chile pods are soft.

3 Spice Mix
3 cloves of garlic
1 tsp Oregano
1 tsp coriander seeds
Salt to taste

2. Pour chile mixture and spices into a blender container and process to a smooth consistency.
