Snow Day Molasses Chocolate Chip Cookies

Unexpected snow days are such a guilty pleasure ~ so are these molasses cocoa cookies.

Familiar and exotic at the same time, these chewy molasses chocolate chip cookies won’t stay around long enough for anyone to guess the secret is fresh ginger. This is another one of those goodies I whipped for most of the B&Bs I’ve cooked at.

1/2 c. butter at room temperature
1 TBL unsweetened cocoa powder
2 tsp ground ginger
2 TBL finely grated fresh peeled ginger
2 tsp cinnamon
1 tsp nutmeg
1/2 c. brown sugar
1/4 c. molasses
1 tsp baking soda, dissolved in 2 TBL hot water
1 1/2 c. flour
1 heaping c. chocolate chips

1/4 c. sugar

Beat butter with gingers, cinnamon, cocoa, nutmeg, brown sugar and molasses until fluffy.

Beat in dissolved baking soda and scrap bowl wet. Add flour, mix well.

Mix in chips. Chill dough for 1/2 hour.

Roll dough into balls about 1″. Roll in sugar and bake on parchment paper.

Bake at 325 degrees about 12 minutes.

Dough freezes well and can be sliced and baked without the sugar.
