Mrs. Ruth’s Green Chile Albondigas

Purple Canvas Cross, Easter Weekend, Santa Fe Cathedral

1 # ground round steak
4 slices bread soaked in milk
1 egg
pinch salt
1/4 c. chopped green chili
1 chopped onion
1 large clove garlic, chopped
2 qts of boiling water
1 TBL fat
2 TBL flour dissolved in cold water

Soak bread and mix with meat, green chili, egg and salt. Shape into balls the size of a walnut. Fry onion and garlic until soft. Add water. Add flour.

Drop meat balls in carefully and simmer gently for ½ hour.
