Madrid Boarding House Butternut Squash Bread

My artwork and I called one of Madrid’s defunct galleries home for almost a decade. I never lived in town but I spent long weekends hustling tourists and eating pumpkin muffins from Java Junction. Here’s my version of the muffins.

Preheat oven to 350 degrees. Grease loaf pan. Use 1 large or 2 small pans. Also works as muffins.

Mix together in large bowl:
3 ½ c flour
3 c. sugar
2 tsp baking soda
1 Tbl cinnamon
2 tsp ginger
1 tsp nutmeg

Whip together in medium bowl:
1 c oil
4 large eggs
2/3 c H2O
1 tsp apple cider vinegar
2 c pumpkin or cooked butternut squash, drained

Mix dry and wet until just mixed.

Add:
1 c coarsely chopped walnuts

Fill 1 large or two small loaf pans. Bake small pans about 50 minutes, larger ones 1 hour, 10 min or until done. Cover with foil as needed to prevent burning.

Freezes well. I toast it and spread it with cream cheese.
