El Rito Potluck Albondigas

Even though it takes a teeth rattling drive through twisty canyons and occasionally flooded arroyos, visiting friends in El Rito is always wonderful. No matter when I show up, they feed me a bowl of home grown green chile stew, open a beer and set me to work rolling albondigas for the family.

1 # ground chicken
1 egg
1/4 c. chopped green chile
3 TBL onion, finely chopped
2 clove garlic, finely chopped
1 tsp salt
1 tsp pepper

Mix the ingredients gently and form into small balls. Simmer for about half an hour in a sauce made with:

2 c. water
1 tsp salt
1 TBL yerba buena(dried mint)
1 small can tomato sauce
1 TBL chopped cilantro
