Competition Red Chile BBQ Sauce for a Crowd

1/4 c. butter
2 c. garlic
2 lg onion diced
4c brown sugar
2 Tbl oregano
2 Tbl hot NM chili powder
3 TBL hot paprika
1 TBL white pepper
1 TBL black pepper, coarse grind
1 TBL cayenne
3 TBL salt
2 TBL allspice
1 TBL cinnamon
1TBL liquid smoke
4 TBL worchestershire sauce
3 c apple cider vinager
1/2 c. onion salt
juice 10 lemons
2 – 6 oz tomato juice
1 – 30 oz tomato paste
4 c. pork drippings

Saute onion and garlic in butter until soft. Add other ingredients and simmer, stirring often.

    One of the artists at Shidoni used to teach at Amarillo College. He’s probably not there anymore, but I remember his work.

    That is one heck of a BBQ sauce. Blows me away the ingredients. I’d love to try this one.
