Sweet Meat Empanaditas

Another one of those holiday special treats based on sweetened mincemeat. I’ve also stuffed these with butternut squash laced with maple syrup, stem ginger and cinnamon.

Dough
2 TBL sugar
3 cups flour, approximately
¼ tsp salt
1 tsp baking powder
¼ cup shortening
1 egg
Shortening for deep frying

1. Into large bowl, add first five ingredients and  mix well.  Add egg and enough water to mix. Knead until satiny smooth.

2. Place enough filling in center of each rolled out circle of dough.  Fold and pinch together with tines of fork around pastry.  With fork poke once a hole on top .

3. Fry until brown on both sides.

Filling
2 1/2 lbs ground beef
1/2 cup white and ¼ cup brown sugar combined
1 tbs cinnamon
1 tsp of nutmeg

1. Boil meat in water until tender.  Remove from water. Mix together ingredients.
