Peanut Muffins for a Crowd

This is another one of those easy Northern New Mexico Bed and Breakfast recipes that can adapt to feed a crowd. These are even better if you toast the nuts before adding them. Be sure to label these so people know they have peanuts in them or do what I do and swap the peanut butter for almond butter and chopped almonds. Chocolate chips are a nice addition, too.

9 servings
2 c. flour
1 TBL baking powder
1 c. milks
2 eggs
¾ c. peanut butter
3 TBL honey
3 TBL molasses
½ c. nuts

36 muffins
8 c. flour
4 TBL baking powder
8 eggs
3 c. peanut butter
¾ c. honey
½ c. molasses
2 c. nuts

Mix peanut butter, eggs and sweets.
Mix dry.
Stir together gently.
Add nuts and mix carefully.
Bake at 375 degrees in greased or papered tins about 20-25 minutes.
