Biscuits Marquise with Local Huckleberry Jam

This is another of those fabulous Bed and Breakfast Cookie recipes. You can also use my recipe for Chocolate Ganache to sandwich them together.

2c. flour
1 tsp. baking powder
1 c. butter
6 egg yolks
2 TBL rum
1 c. sugar
1/2 c. huckleberry or marionberry jam

Preheat oven to 350 degrees.

Sift all dry together.

Beat butter, yolks, rum and sugar. Gradually add dry mix on low speed until smooth.

Fill pastry bag with cookie mixture. Bag out 1 1/2″ shapes about 2″ apart. Flatten slightly.

Bake until slightly golden around the edges, about 9 minutes. Let cool before filling.

Melt jam over heat or in microwave, spread on 1 cookies and top with another.
