Mrs. Vigil’s 1953 Recipe for Calabacitas

Mrs. Vigil’s 1953 recipe for calabacitas is another one of those New Mexican recipes adapted for Midwest tastes. I’d recommend swapping the bell peppers for green chilis, the cheddar for cotijo cheese and the canned corn for fresh. Stir in a heaping teaspoon of ground cumin and toss in a big handful of chopped cilantro at the end for color.

3 TBL butter
6 zucchini, cut into cubes
1 TBL chopped onion
3/4 c. milk
2 tsp salt
2 green peppers, chopped very fine
1/2 c. grated cheddar cheese
1 c. canned corn

Fry squash in butter with onions and peppers. Cook until tender. Add milk, corn, salt and cheese. Cook for 10 minutes on low flames.
