Santa Fe Farmers Market Delicata Squash Stuffed with Cranberries and Toasted Pinons

Quinoa Stuffed Delicata Squash

Hard squash make dinner so easy. It seems like everything can be tossed into oven and roasted. Delicata Squash are the perfect size to stuff–not too big, not too small. They bake quickly and are less sweet than the Acorn varieties.

My favorite stuffing is plain: cooked quinoa tossed with chopped dried cranberries, toasted pions, chopped green onions, minced garlic, chopped parsley, salt and pepper. Drizzle with a nice fruity olive oil and bake for 30 minutes.

Serve with a citrus vinagrette.
