Leche Quemada (Burnt Milk)

May 11, 2010

When we were sick, we could count on this for supper.

Other kids were luckier. They got carnulo. Carnulo was made with an unopened can of sweetened condensed milk simmered in water for 4 hours. That’s  the way produce the best every caramel. Of course, there’s always a chance that the can will explode, but the danger was part of the fun.

This version carries no serious risk except possibly overindulgence.
1/2 c. ground blanched almonds
1 c. sugar
2 one-inch cinnamon sticks

Pour half of the milk in a lagre saucepan with the sugar, almonds and cinnamon. Cook over low heat, stirring occasionally, until misture thickens and becomes golden. Add the remaining milk. Continue cooking about 2 hours or until mixture thickens. Cool. Refrigerate until serving time.
