In the great New Mexico tradition of más o menos, there are times when cheap food is the only kind you can put on the table. For those occasions, there is this New Mexican version of the classic stone soup.

Sopa de Frijol

Place 6 slices of toasted bread broken into pieces in a baking dish. Pour over 3 cups of broth left from cooking beans. Sprinkle with salt and pepper. Dot the top with butter, if you have any. Use grapeseed or olive oil or any kind of oil, if the refrigerator is really empty. Sprinkle with cheese and baked 15 minutes in a 350 degree oven.Sandia Crest, 10,678 fee
