If you haven’t had Tacos con Carne Deshelrado (also known as Ropa Veija or Carne Deshebrado) from a roadside vendor who knows how to do it right, you’ve missed something wonderful. Marinated for hours, slow cooked, hand shredded and moist with a deep, rich beef flavor, it’s best served simply in fresh tortillas with pico de gallo.  It’s made using brisket or flank.

Last weekend at the Santa Fe Farmer’s Market, I got a fix of my favorite road food. In case you can’t make it to Santa Fe, this recipe for carne deshebrada a la nortena has more of an authentic method than my usual and casual style of cooking.
