Pastel de Queso ~ Northern New Mexico 1930’s Cheese Pie

This recipe is an odd form of pie. It’s nothing like a cheese cake, more like a baked custard. The seasoning is make by grinding whole oranges with the cheese. It can be served topped with a baked white meringue or whipped fresh cream.

Pastel de Queso

1 c. milk
1 lb. caseo blanco (or fresh ricotta)
4 eggs
2 small oranges, washed
1 c. sugar

Grind the cheese and oranges. Add sugar, eggs and milk. Mix well and bake in pie shell like a custard pie. Bake until filling sets.

Topping the pie:
Just before removing from the oven, top with meringue and brown or cool and top with whipped fresh cream.
