Colorado Springs Patty Pan Calabacitas

3 TBL grapeseed oil
6 patty pan squash, cut into cubes
3 each green onion, chopped
3/4 c. milk
2 tsp salt
2 sweet red italian peppers, chopped very fine
1/2 c. grated fresh cotijo cheese
3 ears of corn, cut from cob

Fry squash in butter with onions and peppers. Cook until tender. Add milk, corn, salt and cheese. Cook for 10 minutes on low flames.
