Some historical recipes read just like contemporary kitchen shorthand. This Olla, or Lamb Stew, is typical of early 20th Century recipes. It assumes that you know how to make the basic stew. Don’t make a lot of Ollas? This one for Olla Podrida would work.

Olla ~ Homestyle New Mexican Lamb Stew’s, 1940’s

Cook lamb stew with green beans, whole jalapenos and some carrots for 2 hours, then add corn on the cob, flowers from the squash plant, cylnatro(original spelling), yerba buena, green onions, salt and pepper. Boil all together until done.

      No, just one of my favorites. I miss them but have been having a great time finding all the new ones here in Manitou Springs and Old Colorado City.
