Chicos Quebrados ~ Vintage New Mexican Recipe

This 1920’s vintage Northern New Mexican dish reminds me of grits, only spicier. Save the leftovers and fry for breakfast the next morning.

Chicos Quebrados
1 c. chicos
1 tsp salt
2 TBL fat
4 tsp powdered hot red chili
1 small onion
1 large clove garlic

Clean the chicos but do not wash. Grind them in a food chopper.

Cooking in boiling water 3 hours. Drain and save the cooking liquid.

Fry onions and garlic in fat. Add chicos, salt, chili and broth as needed from the chicos. Cook another 10 minutes.

    Wow!! I just discovered your beautiful blog and I am blown away! I can’t wait to try this recipe and several others. I have been kind of obsessed with chicos for several years, and I have about five different kinds from various farmers in my cupboard right now. Thanks for creating such an inspiring site.
