Temole (Chili Stew)

From Jewish Delis to Japan’s Gyūtan Restuarants, beef tongue has been enjoyed in most cattle growing countries. Here is a Depression-era New Mexican recipe for a simple home style chili stew made from baby beef tongue.

1 baby beef tongue
1 tsp salt
½ c. powdered chili or 2 c. chili caribe
1 tsp organo

Boil meat until tender, remove from broth, chop into small pieces and return to broth. Add other ingredients and cook 10 minutes.
