Green Chile Sauce with Pork ~ Vintage New Mexican Comfort Food

Pete Giadone, who passed away in October 2002,  was a retired fireman and a lifetime farmer. He was one of the founders of the Mira Sol Chile Corp. He founded the La Veta Farmers Market in Huerfano County, Colorado.

This simple recipe, which I’ve been making since I first learned to cook, is made with freshly roasted chiles and has an amazing flavor no matter what kind of chiles you use.

Green Chile With Pork
Yield: 4 servings

1 lb Pork cut into small pieces
1 ½ cup of chopped green chile
2 cloves of garlic, mashed
1 tbl flour
2 chopped fresh tomatoes
Salt to taste

1. Fry meat in shortening until browned.

2. Sprinkle flour over meat adding all the other ingredients and enough water for right consistency. Use for, well, almost everything.
