Liborio Market Yam Soup

Ahh, the Liborio Market. What would I do without you? Yams at 4# for $1, cinnamon sticks for $.50 and cilantro for a quarter. That means yam coconut soup for the next two days with freshly made tortilla and pico de gallo.

4 # yams, baked until soft
1 cinnamon stick
a handful of chopped cilantro
2 c. water
2 Tbl grated fresh ginger
1 can coconut milk
maple syrup or dark brown sugar to taste

Peel and chop baked yams. Add to kettle with water, cinnamon stick, ginger and cilantro. Simmer 20 minutes until very soft.

Puree in food processor with 1 can of coconut milk. Sweeten to taste with brown sugar or, better yet, maple syrup. Thin with milk or water if too thick.
