Baja Tacos ~ Best Pinto Bean Tacos in the World

Stopping by Baja Tacos on Cerrillos Road when I pass through town is a decades long habit. Great fish tacos, green chile fries and the best service in Santa Fe but the winner for me is their tofu tacos. Pinto beans, finely chopped tofu and viciously green salsa are grilled together before hitting the taco shell. Cheap, filling and good.

I make a “just pinto bean” version at home, without the tofu since tofu isn’t a big hit at my house, in homemade freshly fried taco shells with heaps of freshly chopped, garlicky  pico de gallo.

Pinto Bean Tacos
12 taco shells
2 c. freshly cooked (or canned) pinto beans
2 large garlic cloves, finely chopped
1 c. fresh roasted and peeled hot chopped green chili
2 TBL grapeseed or vegetable oil

In a heavy frying pan, heat the oil. Add the garlic and green chili. Mash in the beans and heat through.

Fill tacos shells and top with shredded lettuce, chopped tomatoes and shredded cheese.

Serve with lots of locally made beer and bowls of fresh pico de gallo.
